Today I had my second meat-free Monday!
Last week (02/01/12) I made Lemony basil spaghetti with mascarpone, chilli and chives, although to be good I replaced the mascarpone with half fat cream cheese. I was really nice, and the boyfriend ate it too – even if he did supplement it with some chicken thing. I loved how it was creamy and spicy at the same time. I intended to cook for two but had enough leftover for lunch too – always a treat.
Today (09/01/12) I made a mushroom stroganoff with wild rice. Again a Good Food recipe, which had me searching Wolverhampton for a vegetarian equivalent of Worcester Sauce. The recipe is for two so I’ll have the leftovers for lunch tomorrow. I’m already looking forward to it.
While I was munching away on my delicious mushroom dish made from scratch, boyfriend, eating a packet of supernoodles and a chicken thing, suddenly asked:
“Why do you do these meat free Mondays?”
Oh, there are so many reasons! For me, the main reasons are
- It’s good for the environment
- It’s good for me
- It encourages me to cook something I’ve not made before, from scratch.
